BEEF CHIMICHURRI SAUSAGE

This all-beef link is our spin on the classic flavors of a Brazilian churrasco! Seasoned with lime, oregano, garlic, parsley, roasted red bell peppers, cilantro, coal charred red onions, and red chiles. Served with a side of Red Chimichurri sauce for dipping!

12 DAYS OF SMOKED MEAT - DAY 10: SMOKED TOMAHAWK RIBEYE - served with a fully loaded baked potato. Each Tomahawk ribeye weighs on average 3-4lbs. We slow-smoke each tomahawk ribeye to a medium temp. This is one outstanding steak. We only do this one once a year so get by and treat someone special!

12 DAYS OF SMOKED MEAT- DAY 5: Get by for Pitmaster Turan's special SMOKED BRISKET LASAGNA - smoked shredded brisket layered with fresh lasagna noodles, whipped herb mascarpone cheese & a homemade ragu. Topped with grated Parmigiano Reggiano. Served by the plate with Texas Garlic Toast & a Spring mix salad with a house Italian Vinaigrette.

12 DAYS OF SMOKED MEAT: Day 12 - HOLIDAY TAMALE DAY - This is a grand finale of the holiday kind! Join us for a festive plate of our homemade brisket & pulled pork tamales!! We serve this special by the plate. Smoked brisket tamales served with red-roasted salsa & pulled pork tamales served with verde salsa. Served by the plate with pinto beans, Spanish rice, & chips & queso. THANK YOU FOR JOINING US FOR OUR ANNUAL SMOKED MEAT HOLIDAY TRADITION at STILES SWITCH BBQ. 12 DAYS OF SMOKED MEAT - Day 7 : OLA MAILMAN SANDWICH! This sandwich delivers! We take brisket, Switch original sausage, and diced onion and table chop it all together. Made to order. Dressed with Lance's mustard and sharp cheddar cheese sauce. All of this is sandwiched on an Olamaie biscuit. Served with a side of buttermilk and Tabasco seasoned homemade French Fries. Guest Collaboration with Chef Micahel Fojtasek, Olamaie.

12 DAYS OF SMOKED MEAT - DAY 8 is here! Get by for this special plate featuring BISON SMOKED PRIME RIB. We slow-smoke this special cut and sear it off over the live fire on the Santa Maria grill. Served with 2 special sides: Smoked Pork Hash with Duck Fat Roasted Potatoes & Sauteed Green Beans with Bacon & Tomatoes. Served with Horseradish Cream Sauce and a dinner roll. This is one outstanding holiday plate! Join us to celebrate our 14th year in Business!
