House-Made Sausage of the Month of May
Every month, we feature a new House-Made Sausage of the Month. Keep coming back for more unique creations from the Stiles Switch Sausage Team, led by Chris Crowley.
THE BEEF CHIMICHURRI SAUSAGE
This all-beef link is our spin on the classic flavors of a Brazilian churrasco! Seasoned with lime, oregano, garlic, parsley, cilantro, coal charred red onions, and red chiles. Served with a side of house red Chimichurri sauce for dipping!

May 15th
THE NOTORIOUS R.I.B. - we take our Smoked Beef Rib (avg 1.25lbs >) and place it on a bed of tater tots and finish it off by topping with our house Chile con Queso. This is one great RIB! Get the R.I.B. & get the limited edition NOTORIOUS R.I.B. sticker (one sticker per RIB purchase, while supplies last).

May 16th
NATIONAL BBQ DAY - We are celebrating big this National BBQ DAY with one amazing special you need to get by for. House Made Smoked Porchetta - a savory and moist Italian inspired style of smoked pork belly stuffed with fresh herbs and cheese. Our porchetta is slow smoked over post oak wood. We keep in the traditional stuffing with fresh herbs, fresh parmesan cheese, and lemon zest. It is slow smoked and finished off hot to create a crispy, crunchy outer crust on the skin. We are serving with a side of a zesty citrus italian style verde sauce. We will be slicing to order on the block Saturday by the 1/2lb or grab it by the plate with your choice of two sides.

May 17th
Oak Smoked "FLAMING DR PEPPER" Wings. This is one great sauce selection! This Sunday get by for our house "Flaming DR PEPPER Sauce" It's a little sweet with a little heat with a nod to one of our favorite original Texas creations! Our wings are slow smoked and flash fried to finsh. Sauced and tossed to order.

May 19th
SMOKED BRISKET PHILLY - Table chopped Smoked Brisket finished on the flat top with grilled onions and peppers. Drizzled with our house Chile con Queso. Served in a butter-griddled fresh hoagie. Served with a side of Homemade French Fries.
Wednesday
May 20th
SMOKED PRIME RIB - served by the plate served with two special sides: Smoked Pork Hash with Duck Fat Roasted Potatoes & Sauteed Green Beans with Bacon & Tomatoes. Served with horseradish cream sauce and a dinner roll. Or grab this special cut by the 1/2 lb a la carte.

Smoked Brisket Burger Day! We start with house-ground and smoked 1/2lb brisket burgers. Today we will be featuring the fan favorite classic - ALL AMERICAN SMOKED BRISKET CHEESEBURGER - dressed with American Cheese, Switch Special Sauce, and pickles. Served with your choice of homemade Onion Rings or Homemade French Fries.
