House-Made Sausage of the Month of July
Every month, we feature a new House-Made Sausage of the Month. Keep coming back for more unique creations from the Stiles Switch Sausage Team, led by Chris Crowley and Ryan Wilson.
The Firecracker served with House Hot Honey
Based on the classic Southern pickled pork sausage, we brine a 50/50 mix of pork and beef with hot honey and a handful of ham aromatics, then mix it with sage, thyme, garlic, and our own blend of chiles: habanero, cayenne, guajillo, and chipotle. Stuffed in a striking red casing, the finished product has a medium heat, a savory ham aroma, and the perfect blend of “sweet heat”. Served with a side of house-made hot honey for dipping.

Brisket Chile con Carne Enchiladas -brisket stuffed corn tortillas topped off with our House Brisket Chile Con Carne, Shredded Cheddar Cheese, and diced onion. Served by the plate with Spanish Rice & Pinto Beans.
Wednesday
July 9th
SMOKED PRIME RIB by the plate with a special side of Duck Fat Potatoes with Crispy Pork Hash, a side of Sauteed Green Beans with bacon & tomatoes, a dinner roll, and horseradish cream sauce. Or grab it a la carte by the 1/2 lb.

SMOKED BRISKET BURGER DAY! We start with House Ground & Smoked Brisket Burgers! This week, try the BACON HAVARTI SMOKED BRISKET BURGER - dressed with Bacon, Creamy Havarti, Roasted Garlic Aioli, Lettuce, Tomato, & Pickles. Choice of Homemade Onion Rings or Homemade Fries. OR keep it Classic with the ....ALL AMERICAN SMOKED BRISKET CHEESEBURGER - dressed with American Cheese, Switch special Sauce, and pickles. Choice of homemade onion rings or homemade fries.

The Special cut on the Block - the SMOKED PICANHA with House Chimichurri. This special cut is from the Sirloin Cap. We put our Texas BBQ spin on this one, slow smoking over post wood. If you are a steak lover, this one is for you! Don't skip it!

Oak Smoked "Nashville Hot" Pork Belly Burnt Ends. This Sunday we are featuring a special house "Nashville Hot" sauce that we toss our Smoked Pork Belly Burnt Ends in. We serve these over white bread with a skewer of pickles.
