Every month, we feature a new House-Made Sausage of the Month. Keep coming back for more unique creations from the Stiles Switch Sausage Team, led by Chris Crowley.
BEEF CHIMICHURRI SAUSAGE
This all-beef link is our spin on the classic flavors of a Brazilian churrasco! Seasoned with lime, oregano, garlic, parsley, roasted red bell peppers, cilantro, coal charred red onions, and red chiles. Served with a side of Red Chimichurri sauce for dipping!

12 DAYS OF SMOKED MEAT - DAY 2: CHICKEN FRIED BEEF RIB - We take our Smoked Beef Rib and Chicken Fry it until golden brown. Served with cream gravy & mashed potatoes.

12 DAYS OF SMOKED MEAT- DAY 3: SMOKED BIRRIA FRENCH DIP SANDWICH! We take our Smoked Beef Short Rib, Oaxaca Cheese, diced white onion, cilantro, and lime. Served with a side of Beef au Jus for dipping. Served with a side of hand-cut homemade French fries. Guest Collaboration with Chef Philip Speer, Comedor

12 DAYS OF SMOKED MEAT- DAY 4: Swing by for our special SMOKED PICANAHA TAMPIQUENA - our Smoked Picanha is first seared over our live fire Santa Maria Grill and then slow smoked to finish. The Picanha is one amazing cut of beef. If you are a steak lover this day is for you! This special plate is served with warm flour tortillas, a side of our house-made red chimichurri, Monterey Jack Cheese, and fixings. Served by the plate with Spanish rice and pinto beans.

12 DAYS OF SMOKED MEAT- DAY 5: Get by for Pitmaster Turan's special SMOKED BRISKET LASAGNA - smoked shredded brisket layered with fresh lasagna noodles, whipped herb mascarpone cheese & a homemade ragu. Topped with grated Parmigiano Reggiano. Served by the plate with Texas Garlic Toast & a Spring mix salad with a house Italian Vinaigrette.

12 DAYS OF SMOKED MEAT: Day 6 brings us a CAJUN CHRISTMAS at STILES SWITCH BBQ! This Cajun Christmas meets Texas BBQ with a big bowl of our Switch Gumbo. Packed with smoked meats in a rich roux, served Acadian style over potato salad. Served with a link of Boudin, Dunker's seasoned crackers, and homemade hush puppies. We will also be featuring a special a la carte dessert for purchase: The White Chocolate Bread Pudding.

12 DAYS OF SMOKED MEAT - DAY 1 - HOLIDAY BRISKET FLAUTAS (2) Brisket & Roasted Chile Flautas. Topped with Tomato Jalapeño Sauce, Poblano and Corn Pico, & Shredded Cheese. Served by the plate with Cheesy Rice & Pinto Beans. Guest Collaboration with Joel Fried, El Dorado Cafe.
