Every month we feature a new House Made Sausage of The Month. Keep coming back for more unique creations from the Stiles Switch Sausage Team led by Chris Crowley and Ryan Wilson.
BEEF CHIMICHURRI SAUSAGE
This all-beef link is our spin on the classic flavors of a Brazilian churrasco! Seasoned with lime, oregano, garlic, parsley, cilantro, coal-charred red onions and red chilies. Served with a side of house chimichurri sauce for dipping!

12 Days of Smoked Meat - DAY 4 - Smoked Picanha drizzled with house Chimichurri. Served by the plate with Scalloped Potatoes, Serrano Glazed Fried Brussel Sprouts, & Pão de Queijo (Brazilian Cheese Bread). Don't skip this trip to Christmas in Brazil.

12 Days of Smoked Meat - DAY 5 - Smoked Frenched Bone In Pork-Chop with Rosemary, Thyme, and Honey Glaze - served by the plate with hot honey roasted carrots & homemade mashed potatoes.

December 15th
12 Days of Smoked Meat - DAY 6 - CAJUN CHRISTMAS! Bowl of Switch Gumbo - smoked meats in a rich roux served Acadian style over Potato Salad , link of house made Brisket & Pork Boudin, Dunker's Crackers, & homemade hush puppies.

December 17th
12 Days of Smoked Meat- DAY 7 - Ola Mailman Sandwich - table chopped brisket with switch original sausage, diced onion, Lance's mustard, & sharp cheddar cheese sauce on an Olamaie Biscuit. Served with a side of Buttermilk & Tabasco Seasoned Homemade French Fries. Guest Collaboration with Chef Michael Fojtasek, Olamaie & Lil Ola's Biscuits. December 18th
12 Days of Smoked Meat - DAY 8 - SMOKED PRIME RIB - served by the plate with with Duck Fat Potatoes w Crispy Pork Hash. Sautéed green beans with tomatoes & bacon, a dinner roll, and horseradish cream sauce.
Thursday
December 19th
12 Days of Smoked Meat - DAY 3 - Smoked Birria French Dip Sandwich - this special is a collaboration with Chef Philip Speer, Comedor - Smoked Beef Short Rib, Oaxaca Cheese, White Onion, Cilantro, and Lime. Served with a side of Beef Au Jus for dipping and a side of Hand cut Homemade French Fries.
