SAVE THE DATES & Join us for a Smoked Meat filled Holiday Extravaganza at Stiles Switch BBQ. It's our 13th year spreading good cheer through smoked meats and cold beer! If you are just joining us, our Annual 12 Days of Smoked Meat has become a local holiday tradition. For 12 Days in December we feature a non-regular smoked meat special menu item. A lot of these culinary creations are only featured once a year at Stiles Switch BBQ. We also invite some of our favorite friends to collaborate on special days for one day only. This season is about food, fun, and friendship here at Stiles Switch BBQ!
Ladies & Gents we are proud to present our 2024 annual 12 Days of Smoked Meat -Menu Lineup! Day 1: Tues, Dec 10th - Holiday Brisket Flautas - (2) Brisket & Roasted Chile Flautas Wrapped & Golden Fried Flour Tortillas. Topped with Tomato Jalapeno Sauce, Poblano & Corn Pico, & Shredded Cheese. Served by the plate with Cheesy Rice & Pinto Beans. Guest Collaboration with Joel Fried, El Dorado Cafe.Day 2: Wed, Dec 11th - Chicken Fried Beef Rib served with Mashed Potatoes and Cream Gravy.Day 3: Thrs, Dec 12th - Smoked Birria French Dip Sandwich - collaboration with Chef Philip Speer, Comedor - Smoked Beef Short Rib, Oaxaca Cheese, White Onion, Cilantro, & Lime. Served with a side of Beef Au Jus for dipping & Hand Cut Homemade French Fries. Day 4: Fri, Dec 13th - Smoked Picanha drizzled with house Chimichurri. Served by the plate with Scalloped Potatoes, Serrano Glazed Fried Brussel Sprouts, & Pão de Queijo (Brazilian Cheese Bread). Day 5: Sat, Dec 14th - Smoked Frenched Bone In Pork-Chop with Rosemary, Thyme, and Honey Glaze - served by the plate with hot honey roasted carrots & mashed potatoes. Day 6: Sun, Dec 15th - CAJUN CHRISTMAS - Bowl of Switch Gumbo - smoked meats in a rich roux served Acadian style over Potato Salad , link of Boudin, Dunker's Crackers, & homemade hush puppies. MONDAY, DECEMBER 16th - CLOSEDDay 7: Tues, Dec. 17th - Ola Mailman Sandwich - collab with Michael Fotajek - table chopped brisket with switch original sausage, diced onion, Lance's mustard, & sharp cheddar cheese sauce on an Olamaie Biscuit. Served w a side of Buttermilk & Tabasco Seasoned Homemade French Fries. Guest Collaboration with Chef Michael Fojtasek, Olamaie & Lil Ola's Biscuits.Day 8: Wed, Dec. 18th - Smoked Prime Rib served w a side of Duck Fat Potatoes w Crispy Pork Hash, Sautéed Green Beans w Tomatoes & Bacon, a dinner roll, & Horseradish cream sauce. Day 9: Thrs, Dec 19th - Smoked Chicken & Dumplings served w Dunker's seasoned crackers. Day 10: Friday, Dec. 20th - SMOKED TOMAHAWK RIBEYE w/ a loaded baked potato. Day 11: Saturday, Dec. 21st - Braised Beef Roast served by the plate with Mashed Potatoes & brown gravy, & sauteed green beans with tomatoes & bacon. Day 12: Sunday, Dec 22nd - HOLIDAY TAMALE DAY - smoked brisket tamales served with red roasted salsa & pulled pork tamales served with verde salsa.
